Here's my best simpleton explanation. Some people smarter than myself were able to look at the computer code the game uses and has found the actually ratings for each player. The rating to the best of our knowledge are explained below.

Note that the ranges, I use below are general for the Arcade and NES games, you con often edit ROMs to have values well outside the normal range

BATTING

Power: This is simply a rating of how hard/far the ball can be hit by a player. Generally power ratings range from about 690-975. All pitchers have a power rating of 640. Note the Pinch Hit Power Boost

Contact: The contact rating is used for balls not hit square by the bat and is subtracted from the players Power rating if the ball is hit off the end of the bat or the batter is jammed. Contact ratings generally range from 0-40.

Speed: The is a rating of how fast a player runs on the basepaths. Ratings are range from 118-148.


Pitching:

Stamina: Pitchers Stamina's are ratings can based be explained as a hit points system. For each curve pitch (no drop/not fast) you throw, you lose one point of stamina. For each fast ball or drop pitch you throw you lose 2 points of stamina. Once your remaining stamina hits 0, all you other values start decreasing with each pitch you throw. Starting pitchers(NES) have a range of 40-54 points of stamina and relief pitchers(NES) have 12-16 points of stamina. The stamina ratings for Arcade pitchers are a bit more variant.

Pitching Speeds: Each pitcher has 3 speed ratings, 1 each for their curve, fastball, and drop pitch. These ratings can create a range of speeds on the pitches (usually 6-7 MPH). The speed rating/speed lookup table is here Pitch Speeds Table

Curve: Each pitcher has 2 curve ratings, 1 Left and 1 Right. Right handed pitchers tend to have a higher curve away from right handed hitters. Curve ratings range from 1-15.

Drop: The higher a pitchers drop rating, the more likely that their drop/knucleball pitch will drop as an unhittable pitch that will be a ball. Drop ratings range from 1-15. Drop Pitch
